Our second kitchen diaries post! This last month, we experimented with some new recipes but also tried to simplify and lighten up our meals. We used the grill more and I can’t wait to use it all summer long.
We started off the month with Chrissy Teigen’s banana bread recipe - which is amazing! We don’t own a bundt cake pan so I just used a regular cake pan and it was so good. A new, unexpected ingredient she adds is unsweetened shredded coconut. I’ve never had it in banana bread and it adds a nice flavor and texture you didn’t know you wanted.
I was excited about this next recipe. We love experimenting with Asian recipes, and I’ve been wanting to make my own bao buns from scratch. I followed A Cozy Kitchen’s recipe, but we added sauteed ground pork with chopped up shiitake mushrooms. The fresh carrots, cucumber, and microgreens brought a nice bright flavor to the dish.
They were a great success! We served them alongside jasmine rice with more shiitake mushrooms and sauteed bok choy. Lately I’ve been loving adding a few drops of sesame oil to sauteed veggies!
Go figure, we were in the mood again for spaghetti with homemade pasta sauce and meatballs! This is the same recipe we made last month and it’ll probably be made at least once a month, it’s so good. I whipped up a loaf a bread that afternoon as well, nothing beats fresh homemade bread!
This next recipe is one that Alex wanted to make for a while. Ever since our mini honeymoon in Kentucky, he’s been wanting to make hot fried chicken (he still talks about the amazing fried chicken he had at Royals!).
He brined a whole cut up chicken in buttermilk and habanero hot sauce (!) for a day, then breaded it and deep fried. And if that amount spice wasn’t enough, he made a glaze out of brown sugar and cayenne. He served it with pickles and bread to help with the heat (and it was needed!).
For the rest of April, with the weather warming up we wanted to lighten up our meals. I ate a lot of simple healthy dinners, such as this roasted sweet potato topped with sauteed kale, avocado, and TJ’s Everything But the Bagel seasoning.
And we can’t forget about the grill! Since getting our grill, we have been grilling salmon instead of baking it and it is so good! Whenever we grill meat, we usually grill regular or sweet potatoes with it along with a green vegetable or make a salad. Simple yet satisfying!
Already this month we’ve been grilling a lot more and have eaten out on the deck a few times. What do you think we should make in May?
